Chocolate Raspberry Squares

Yield: 3 dozen

Ingredients

1 1/4 cups all-purpose flour
1 1/4 cups Quaker Oats (quick or old fashioned, uncooked)
1/3 cup granulated sugar
1/3 cup firmly packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt (optional)
3/4 cup (1 1/2 sticks) margarine or butter, chilled and cut into pieces
1/4 cup chopped almonds (optional)
3/4 cup raspberry preserves
1 cup (6 oz.) semi-sweet chocolate pieces
1/2 cup (3 oz.) vanilla milk chips or semi-sweet chocolate pieces (optional)

Directions:

Heat oven to 375 F.

In large bowl, combine flour, oats, sugars, baking powder and salt. Cut in margarine with pastry blender or two knives until mixture is crumbly. Reserve 1 cup for topping; stir in almonds. Set aside.

Press remaining oat mixture evenly onto bottom of ungreased 8-inch square baking pan. Bake 10 minutes. Remove from oven.

Spread preserves over crust to within 1/4 inch of edges; sprinkle evenly with 1 cup chocolate pieces. Sprinkle reserved oat mixture over chocolate pieces.

Bake 30 - 35 minutes or until golden brown. Cool completely. If desired, melt vanilla milk chips according to package directions; drizzle over top. Let stand until set. Cut into squares. Store tightly covered.

Meal Solution: For an easy and fabulous special occasion dessert, cut into larger squares and top with a small scoop of vanilla ice cream.
