Rice and Turkey Skillet Curry

A lowfat blend of rice, turkey, cranberries and apricots.

Yield: Makes 4 servings

Ingredients

2 cups water
1 cup Uncle Ben's Converted Brand Rice
3/4 cup (6 oz.) pineapple juice
1/3 cup diced dried apricots
1/4 cup dried cranberries
1 teaspoon curry powder
1-1/2 cups (8 oz.) cooked turkey

Directions:

In large skillet, bring 2 cups water, rice, pineapple juice, apricots, cranberries and curry powder to a boil. Cover; reduce heat and simmer 15 minutes or until rice is tender and liquid is absorbed.

Add turkey to rice. Cover and cook over low heat 5 minutes or until turkey is hot.
