Broiled Fish with Dill Tartar Sauce

Serve with sauteed onion and red peppers, crusty dinner rolls and lite peaches

Yield: 4 servings

Preparation Time: 15 minutes

Ingredients

Dill Tartar Sauce
1/3 cup mayonnaise or salad dressing
1 tablespoon sweet pickle relish
1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill weed
Fish
1/4 cup butter or margarine, melted
1 teaspoon lemon juice
4 (4 oz.) orange roughy, whitefish, or haddock fillets
fresh dill weed sprigs
1 lemon, quartered

Directions:

Prepare tartar sauce by stirring together mayonnaise, pickle relish and dill weed in small bowl and set aside.

For Fish:
Stir melted butter and lemon juice together in small bowl. Oil broiler pan; place fish on oiled pan. Brush with butter mixture.

Broil 4 to 6 inches from heat for 7 to 10 minutes or until fish flakes easily with fork, turning once and brushing occasionally with butter mixture.

Serve fish topped with a dollop of tartar sauce, a sprig of fresh dill and a quartered lemon.
