Pepperoni Pasta with Zucchini Marinade

Yield: Makes 6 servings

Ingredients

1/3 cup olive oil
1/4 cup red wine or white vinegar
1 pkg. (0.7 oz.) Italian salad dressing mix
2 cups chopped fresh tomato
2 small zucchini, thinly sliced and cut in half
6 cups (12 oz.) farfalle pasta, uncooked
1 pkg. (3 oz.) sliced pepperoni, cut into strips
1/4 cup freshly grated Parmesan cheese (optional)

Directions:

In shallow dish, stir together oil, vinegar and salad dressing mix; stir in tomato and zucchini.

Cook pasta according to package directions; drain.

Toss hot pasta with zucchini mixture and pepperoni. Sprinkle with cheese. Serve immediately.
