Pepperoni Pasta with Zucchini Marinade
Ingredients

red wine or white vinegar

(0.7 oz.) Italian salad dressing mix

chopped fresh tomato

small zucchini, thinly sliced and cut in half

(12 oz.) farfalle pasta, uncooked
|

(3 oz.) sliced pepperoni, cut into strips
|
| 1/4 |

freshly grated Parmesan cheese (optional)
|
Directions:
In shallow dish, stir together oil, vinegar and salad dressing mix; stir in tomato and zucchini.
Cook pasta according to package directions; drain.
Toss hot pasta with zucchini mixture and pepperoni. Sprinkle with cheese. Serve immediately.
