Spicy Chicken and Pepper Pasta

| 1 | tablespoons | olive oil |
| 1 | cup | onions, chopped |
| 2 | cloves | garlic, minced |
| 2 | cans | (14 1/2 oz.) diced tomatoes |
| 2 | cans | (4 oz.) green chilies, chopped |
| 2 | cups | cooked chicken, thinly sliced |
| 1/2 | large red pepper, cut into short, thin strips | |
| 1 1/2 | tablespoons | balsamic vinegar |
| 1 | teaspoon | oregano |
| 1/2 | teaspoon | basil |
| 1/4 | teaspoon | thyme |
| 1 | pkg. | (8 oz.) penne, cooked and drained |
| Garnish with freshly grated Parmesan cheese |
In a large skillet, cook onions in oil over medium-high heat for 3 to 4 minutes until tender. Add garlic and saute another 2 minutes. Add diced tomatoes, green chilies, cooked chicken, red bell pepper, vinegar, oregano, basil and thyme.
Reduce heat and simmer for 5 minutes or until thoroughly heated. Pour over hot pasta and toss gently to coat. Sprinkle with Parmesan cheese.
Yield: Makes 6 servings
