Spicy Chicken and Pepper Pasta

A zesty tomato dish!

Ingredients

1 tablespoons olive oil
1 cup onions, chopped
2 cloves garlic, minced
2 cans (14 1/2 oz.) diced tomatoes
2 cans (4 oz.) green chilies, chopped
2 cups cooked chicken, thinly sliced
1/2 large red pepper, cut into short, thin strips
1 1/2 tablespoons balsamic vinegar
1 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon thyme
1 pkg. (8 oz.) penne, cooked and drained
Garnish with freshly grated Parmesan cheese

Directions:

In a large skillet, cook onions in oil over medium-high heat for 3 to 4 minutes until tender. Add garlic and saute another 2 minutes. Add diced tomatoes, green chilies, cooked chicken, red bell pepper, vinegar, oregano, basil and thyme.

Reduce heat and simmer for 5 minutes or until thoroughly heated. Pour over hot pasta and toss gently to coat. Sprinkle with Parmesan cheese.
