Confetti Pierogies
This dish adds a colorful festive look to the table!
Ingredients

(16.9 oz.) Mrs. T's Potato & Cheddar or Potato & Onion Pierogies

| 1 |
cup |
salsa
|
| 1 |
cup |
diced vegetables (green, red, yellow peppers, red onions and black olives)
|
| 1/2 |
teaspoon |
cilantro
|
| 1 |
teaspoon |
lime juice
|
Directions:
Thaw frozen pierogies in boiling water for 5 minutes, uncovered. Drain and set aside.
In a skillet, combine salsa, vegetables, cilantro and lime juice. Saute until vegetables are tender-crisp (about 5 minutes.)
Add drained pierogies and saute for an additional 3 to 5 minutes. Remove from heat and serve.
