Orange Pumpkin Custard

This lovely custard is prepared in a crockpot

Yield: 6 servings

Preparation Time: 10 minutes; Cooking Time: 2 hours

Ingredients

3 eggs, slightly beaten
1 cup pumpkin, canned solid pack pumpkin or cooked
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon grated orange peel
1 can (13 oz.) evaporated milk (1 2/3 cups)

Directions:

Combine eggs, pumpkin, sugar, cinnamon, allspice and orange peel; stir in milk. Pour into a greased 2-pound size coffee can; cover tightly with foil. Place can in crock pot. Pour warm water around can, 1-inch deep. Cover and cook on the high-heat setting until knife inserted just off-center comes out clean; about 1 3/4 to 2 hours. Serve custard warm or cold.
