| 1/2 | cup | cracked or coarsely ground black pepper |
| 1/4 | cup | coarse salt, kosher or sea |
| 1/4 | cup | paprika |
| 3 | Tablespoons | pure chili powder |
| 2 | Tablespoons | garlic powder |
| 2 | Tablespoons | ground cumin |
| 2 | Tablespoons | dried oregano |
| 2 | Tablespoons | dried thyme |
| 1 | Tablespoon | cayenne pepper |
Combine all ingredients in a bowl and stir or whisk to mix. Transfer to a large jar or individual containers; cover and store away from heat and light.
The rub will keep for several months.
Note: For a sodium-free rub, omit salt.
