Swiss Canadian Bacon and Eggs

A low carb recipe

Yield: 4 servings

Ingredients

8 eggs
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup green onion, finely chopped, divided
4 slices Canadian bacon, cut in half
4 ounces Swiss cheese, shredded

Directions:

In a medium mixing bowl, whisk together eggs, milk, salt and pepper until well blended. Set aside 2 tablespoons onions. Stir remaining onions with egg mixture.

Coat 12-inch skillet with nonstick spray and place over medium low heat. Add egg mixture when skillet is hot. Cover tightly; cook 14 minutes or until almost set.

Arrange bacon in pinwheel on top of egg mixture. Top with cheese; place under preheated broiler for 2 minutes or until cheese is bubbly. Top with remaining onion; cut into 4 wedges to serve.
