Homestyle Noodles
Yield: Makes about 1 lb.
Ingredients

all purpose flour

Directions:
In a large bowl, beat the egg yolks and egg until light in color. Add the salt and water and combine. Add 2 cups of flour to the egg mixture and work to stiff dough. Your hands are the best tools for this.
Divide the dough into 2 or 3 equal parts, cover with plastic wrap or a towel to keep from drying out and allow to rest about 5 minutes. Place some bench flour on your work surface (2T) and start rolling out one of the dough pieces. Roll as thin as possible, then cover and allow to rest about 10 minutes. Repeat with remaining dough.
Uncover rolled dough, sprinkling just a little bit of flour on the top to aid in the rolling process. Roll like a jellyroll and cut into strips. Try different thicknesses for different uses. Lay cut noodles over a broomstick or spread on clean tea towels and allow to dry about 10 to 15 minutes. Repeat until all dough is cut.
To cook, bring a large pot of salted water to a boil. Drop noodles in, stir and boil until noodles are tender. Depending on the thickness of your cuts, 5 to 10 minutes should be enough! Taste for tenderness.
