Ingredients

3 large VERY ripe bananas
1/2 cup oil
2 eggs
1 teaspoon vanilla extract
1/4 cup buttermilk (can use whole milk with 1 teaspoon vinegar to sour)
1-1/2 cups granulated sugar
2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Cream cheese icing or Whipping Cream
Toasted, sliced almonds

Directions:

Preheat oven to 350 degrees.

In a large bowl, mash the bananas with your mixer. Add all of the liquid ingredients and mix on medium speed until incorporated, about a minute. Add the sugar and mix scraping down the sides.

Add the remaining dry ingredients and mix on medium until just incorporated. Don't over mix. Grease and flour a 9 x 13 or 2-round cake pans. Pour mixture into designated pans and bake about 35 minutes. Use the toothpick method to check for doneness.

When cool, ice with cream cheese icing or even whipping cream. Garnish with toasted sliced almonds!

“This cake is soooo moist! I frosted it with store bought cream cheese frosting and loved every last bite.”
