Rhubarb Sauce

One of my mother's favorites!

Ingredients

5 stalks rhubarb, cleaned and trimmed
1 cup water
3 Tablespoons granulated sugar
1/2 of a 3 ounce packet of strawberry Jell-O
Serving Suggestions:
Vanilla ice cream
Shortcake
Whipped Cream

Directions:

Slice the rhubarb into one-inch chunks or thinner. Place in a medium saucepan and add the water. Bring to a boil and reduce heat and simmer until rhubarb breaks down and is tender. This should take a total of about 5 minutes.

Stir in the sugar and Jell-o. Continue stirring until the sugar melts completely. Pour mixture into a storage container and allow to cool. Mixture thickens as it cools.

Enjoy over toast, ice cream or shortcakes!
