Fresh Peach Pie

Top it off with a scoop of vanilla bean ice cream!

Yield: Serves 8

Ingredients

1 frozen pie crust (not deep dish)
4 large, ripe peaches, peeled and sliced thin
1 cup granulated sugar
2 Tablespoons flour
2 eggs, beaten slightly
2 Tablespoons unsalted butter

Directions:

Place sliced peaches in unbaked piecrust.

Mix sugar and flour in a smallish bowl and whisk in beaten eggs.

Pour sugar mixture over the peaches and dot with thin slices of the butter.

Bake at 400 degrees F. for 15 minutes and then reduce heat to 325 degrees F. and bake an additional 30 minutes. Cool completely before cutting.

Note:
If peaches are juicy, you could add more flour to make the filling more firm.
