Beefy Baked Onions with Swiss

A great side dish with roasted meats or just by themselves!

Yield: Serves 6

Ingredients

4 medium yellow onions, peeled and quartered
1 cup beef broth
1 Tablespoon low sodium soy sauce
1 teaspoon freshly ground pepper
1/2 teaspoon dried rubbed sage
3 slices deli Swiss cheese OR 2 ounces shredded Swiss

Directions:

Preheat oven to 400 degrees. Separate quarters into pieces and place in a microwave and ovenproof container. Pour broth and soy sauce over onions and dust with pepper. Microwave, uncovered, on high 4 minutes. Remove dish from microwave and stir onion slices to moisten all.

Place onions, uncovered, in preheated oven for 35 to 40 minutes or until they are fork tender. Dust with the sage and lay Swiss over the onions. Put back in oven to melt the cheese.
