Chocolate Cherry Amaretto Cake

Yield: Serves 8 to 10

Ingredients

1 pkg. chocolate cake mix
3 eggs
1 stick (1/2 cup) unsalted butter, melted
1/2 cup Amaretto
1 can cherry pie filling
1 tub (8 oz) Cool Whip
Sliced almonds, toasted

Directions:

Mix cake mix, eggs, butter, amaretto and pie filling in a large bowl. Line a medium size stainless steel bowl with aluminum foil making it smooth. Pour batter into lined bowl. Bake according to package directions or until a toothpick inserted into the center of the cake comes out clean. Allow cake to cool while still in bowl.

When cool, invert cake onto a serving dish. Carefully remove the foil from the cake and ice with the whipped topping. Sprinkle with the toasted almonds and decorate with fresh fruit and a sprig of mint.

Alternate idea: Replace whipped topping with white frosting and decorate with fresh cranberries.
