Hot and Spicy Kung Pao Chicken
Low sodium, low fat, source of Vitamin B

Ingredients

granulated sugar
|
| 1 |
Tablespoon |
low sodium soy sauce
|
| 3/4 |
cup |
water
|
| 1 |
Tablespoon |
canola oil
|
| 1-1/2 |
lbs. |
boneless, skinless chicken breasts, cut into bite size dice
|
| 1/2 |
cup |
unsalted peanuts
|
| 4 |

large green onions, sliced thinly including blades
|
Directions:
Blend seasoning, sugar, soy and water in a bowl and set aside.
In a large skillet or wok, heat oil then add chicken and stir-fry until well browned.
Add peanuts and stir-fry until fragrant and brown, then add onions and stir-fry about 1 minute.
Add the seasoning mixture and cook one minute or until sauce starts to thicken. Divide into four servings!
