Beef Salad

Ingredients

2 cups cooked beef, (I used eye of round)
1/4 to 1/2 cup mayonnaise, or just enough to moisten
1 Tablespoon prepared mustard
2 green onions, chopped including blades
1 stalk celery, chopped
1 teaspoon pickle relish
Salt to taste
Pepper to taste
1 teaspoon fresh tarragon, chopped finely (optional)
Serve as a spread on crackers

Directions:

Place cooked beef in a food processor and pulse until chopped into small pieces. Remove and place in medium bowl for mixing. Add the mayo a little at a time to get to desired consistency. Add remaining ingredients and stir to combine. Allow to sit, covered, in the refrigerator for several hours to develop flavors. Great on crackers as a spread!!
