Spicy Four Bean Bake
Great as a side or top on a corn chip, add shredded cheese and you have a spicy mixed bean nacho!
Yield: Serves 6-8
Ingredients

(15 oz) dark red kidney beans

| 1 |

(15 oz) lima beans
|
| 1 |
can |
(15 oz) black beans
|
| 1 |
can |
(15 oz) cannellini beans
|
| 1 |
lb |
chorizo, browned and drained
|
| 1-2 |
Tablespoons |
adobo sauce from chipotle peppers
|
| 2 |
Tablespoons |
brown sugar
|
| 2 |
Tablespoons |
minced garlic
|
| 2/3 |
cup |
barbecue sauce
|
| 2 |
Tablespoons |
robust molasses
|
| 1/2 |
cup |
ketchup
|
Directions:
Drain and rinse all beans.
Combine all ingredients and toss to coat and mix.
Place in a large saucepan or dutch oven and simmer over medium heat for about 15 minutes or longer. Can also be done on your gas grill or even in your oven!
Bake in 350 degree oven for about 25 minutes or on the grill, in a disposable pan or bean pot, until hot.
