Alex's Crescent Muffins

Yield: Serves 4

Ingredients

2 eggs, beaten
1 tube (4 count) crescent rolls
Pepper Jack cheese, cut into 4 - 1/2 inch cubes
Salt to taste
Pepper to taste

Directions:

Preheat oven to 325 degrees. Spray a muffin tin with non-stick spray.

Open crescent rolls and separate at perforations. Set aside one piece. Flatten rest of dough slightly and place into four muffin cups, molding dough up sides. Drop one cheese cube in each cup and then distribute eggs evenly, top with salt and pepper.

With remaining dough triangle top each of the four muffins. Don't worry about sealing the edges. Bake at 325 degrees for about 12 to 13 minutes. Eat while still warm. Keep in mind, that cheese will be VERY hot and molten!!
