Judy's Favorite Pasta

Yield: Serves 4

Ingredients

3 tomatoes, seeds removed and diced
1 ball fresh mozzarella, diced
4 cloves garlic, minced
6-8 leaves fresh basil, cut into chiffonade
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
3-4 Tablespoons extra virgin olive oil
1 lb. dry spaghetti, fettuccine, or linguini

Directions:

Toss tomatoes though olive oil in a large bowl and cover. Set aside and allow to marinate for at least an hour at room temperature.

When ready to eat, add mozzarella, garlic, basil, salt and pepper to tomatoes.

Cook pasta to manufacturers specifications and drain.

Toss hot pasta into tomato mixture and serve with a rotisserie chicken!!
