| 1 | medium red onion, diced | |
| 2 | Tablespoons | chopped garlic |
| 1 | lb. | spicy Italian sausage |
| 1 | lb. | boneless skinless chicken breast, diced |
| 1 | medium red bell pepper, diced | |
| 1 | medium yellow bell pepper, diced | |
| 1 | medium green bell pepper, diced | |
| 3 | pkgs. | Lipton Cajun Red Beans and Rice |
| 3 | cans | (14 oz.) chicken broth or (48 oz.) carton can be used |
| 3 | teaspoons | Cajun seasoning, to taste |
| 1 | lb. | peeled and deveined shrimp |
In a large pot, saute diced onion with garlic. Add a little water or oil to cook through. Add Italian sausage and brown. Drain and return to pot.
Add diced chicken and cook until white. Juices from chicken are left in pot. Add diced colored peppers. You can add a little broth to help vegetables cook.
Add three packages of Lipton Cajun Red Beans and Rice and remaining broth. Bring to a boil and then simmer for 30 minutes. Rice will absorb broth while cooking.
Add Cajun seasoning; more or less can be used to suit your taste. Add shrimp the last ten minutes before serving. Cook shrimp until pink.

We like to slice 7 Grain bread or make jalapeno cornbread to go with the gumbo.

The recipe is hearty, warm, and spicy at the same time. If you are looking for a tasty alternative to the same old meat chili, try making this Gumbo instead! Feel free to add more garlic, play with the spice a bit, and the consistency you want. Be sure to acompany with a nice bagette. Hint. Watch the cajun seasoning. Many contain lots of salt. Try to find one with less salt so that you can regulate the heat and the salt content separately.”
