Swiss Chicken and Broccoli Casserole

Yield: Serves 6

Ingredients

1 lb. chicken tenders or skinless, boneless chicken breasts
1 cup frozen broccoli florets
1 pkg. (8 oz.) shredded Swiss cheese
1 can (10 3/4 oz.) cream of chicken soup
1/2 cup milk
10 butter flavored crackers, crushed
Cooked rice (six servings, 3/4 cup each)

Directions:

Preheat oven to 350 degrees F. Spray a 9×9 inch baking dish with non-stick cooking spray. Cut chicken into bite size pieces and toss in bottom of dish. Top with frozen broccoli and Swiss cheese.

In a medium bowl, mix the soup and milk and pour over the cheese, spreading out as needed. Top with the cracker crumbs and cover with foil.

Bake at 350 degrees for 30 minutes then uncover and bake an additional 20 minutes. Serve over the cooked rice.
