Cheesy Pineapple Bake

Great as a side dish or add the meat to make it a main dish entree!!

Ingredients

2 cans (20 oz. ea) Dole Pineapple chunks, drained
1/3 cup Gold Medal all purpose flour
3/4 cup granulated sugar
2 cups Kraft shredded sharp cheddar cheese
1/2 sleeve Ritz crackers, crushed
4 Tablespoons unsalted butter, cut into thin slices
Optional adders:
1 cup leftover ham from the spiral cuts OR
1/2 ring Eckrich smoked sausage, cut into rounds

Directions:

Preheat oven to 350 degrees F. Grease a medium size casserole dish.

In a medium bowl, combine the pineapple, flour, sugar and cheese; toss to coat. Add meat at this time, optional.

Pour pineapple mixture into casserole dish and top with the cracker crumbs. Dot with the butter slices and bake for 25 to 30 minutes.

“What a great side dish! I brought this to Easter dinner and everyone raved at how delicious it tasted. (I didn't add ham and I used whole wheat crackers instead of Ritz). It's so fast to put together. I know I'll be making it again to serve with leftover ham. ”
