Garbanzo and Radish Salad

Quite tasty as a side or as a topping on crackers or bruschetta...can add fresh basil if you like.

Yield: Serves 6

Ingredients

1 can garbanzo beans, drained
2 cups sliced radishes (sliced into 1/2 rounds)
3 green onions, sliced, tops included
1/2 English cucumber, diced
1 clove garlic, minced
2 Tablespoons chopped fresh parsley
1/2 cup fat free Italian dressing
Salt to taste
Pepper to taste

Directions:

Mix all ingredients together, cover and hold in refrigerator until ready to eat. Best if allowed to sit at least one hour before serving!!
