Peach Tart

Ingredients

1 refrigerated pie crust
3 ripe peaches, sliced thinly
2 Tablespoons brown sugar
1/2 teaspoon ground cinnamon
2 Tablespoons unsalted butter, cut into small pieces
3 Tablespoons jelly or preserves

Directions:

Preheat oven to 375 degrees F.

Unroll pie crust and place in center of a cookie sheet.

Place peach slices in a continuing circle leaving a 1- inch border around the outside for folding the crust in.

Sprinkle brown sugar and cinnamon over peaches and dot with butter. Fold the crust in on top of the peaches to make a rough border.

Bake for 30 minutes or until crust is golden and peaches are tender.

Microwave jelly until liquid. Brush jelly over the peaches to create a shiny surface. Serve hot with vanilla bean ice cream or at room temperature.
