Chocolate Cheesecake Bites

Yield: 24 squares

Ingredients

1 box (18.25 oz) chocolate cake mix
1 cup chopped pecans
3 eggs, divided
1 stick (1/2 cup) unsalted butter, softened
1 box (8 oz) cream cheese
1 lb (3 3/4 cups) powdered sugar
1/2 teaspoon almond extract (or orange)

Directions:

Preheat oven to 350 degrees F. 

Combine cake mix, pecans and one egg in a medium bowl (mixture will be very dry and crumbly).  Press mixture into a greased 9 x 11 baking dish. 

Cream together the cream cheese, remaining two eggs, powdered sugar and extract.  Pour this over the cake mixture and bake for 40 to 45 minutes or until slightly browned.  Remove from oven and cool.  Refrigerate until set. 

Cut into small squares before serving.  Even better topped with a small scoop of vanilla bean ice cream!!
