Yield: 8-10 servings

Ingredients

3 lbs boneless beef chuck (not ground)
1/3 cup canola oil
1/4 cup yellow onion, diced
4 cloves garlic, minced
1 cup beef stock or canned beef broth
1 bottle flat beer (Pale Ale brings out the spicy flavors of the chili)
Water (to thin down the chili depending on your preference)
3 Tablespoons chili powder to taste
3 cans (14.5 oz ea) diced tomatoes and liquid
4 Tablespoons tomato paste
2 teaspoons dried oregano
1 Tablespoon ground cumin
Salt to taste
2 Tablespoons Frank's Red Hot Sauce
1 can (16 oz.) kidney beans, drained (discard liquid)
Garnish with any of the following if desired:
Sour cream
Chopped green onions
Shredded cheddar cheese
Salsa

Directions:

Lightly season beef with salt and pepper. Grill beef chuck to medium rare state to give it that right off the grill flavor and grill marks. Allow to rest for at least 15 minutes before cutting into bite size pieces.

In a hot saute pan, add oil, onion and garlic (garlic becomes bitter if overcooked) and saute until softened (about 10 minutes).

Add to stockpot along with broth, beer, water (if desired), chili powder, tomatoes, tomato paste, oregano and cumin.

Over high heat, bring mixture to a simmer. Add salt, hot sauce and cooked beef; check again for seasoning adjustments.

Reduce heat to maintain a simmer and cook, partially covered, until beef is tender (30 minutes). Check occasionally and add more broth if needed.

Add beans (I prefer kidney beans, but can use black beans).

Cook an additional 10 minutes and serve to your favorite football fans.

Garnish with sour cream, chopped green onions, cheddar cheese, pico, salsa if desired.
