Trick or Treat Muffins

Yield: 10 regular size muffins

Ingredients

1 lb ground beef or other lean ground meat
1 small onion, cleaned and chopped
1/2 small green pepper, cleaned and chopped
1 Tablespoon Worcestershire sauce
1 large egg
1 clove garlic, minced
1 slice bread
1/2 cup tomato juice
2 cups mashed potatoes
Green food coloring
Chives
10 green olives with pimentos
Canned fried onions

Directions:

Preheat oven to 350 degrees F. 

Place meat, onion, pepper, Worcestershire, egg and garlic in a medium bowl. 

Pour tomato juice in a shallow bowl and add the slice of bread, turn bread over to absorb the majority of the juice then add bread and juice to meat mixture.  Mix with hands (or put the content of the entire bowl into a large ziplock bag and mash to combine) until well mixed. 

Place meat evenly into 10 greased muffin cups or if you prefer add the foil liners first.  Remember that this won't rise so you can fill almost to the top.  For a special surprise, add a dollop of ketchup or bbq sauce on the top before baking! 

Bake for 35 to 40 minutes or until done.  Allow to cool slightly.

While muffins are cooling, warm the potatoes and add a couple of drops of green food coloring until you reach the desired shade of green.   Cut olives in half lengthwise and place open side up showing the red pimento.  Sort through the french fried onions to find nice round pieces to use as the mouth. 

Ice the muffins with the green potatoes.  Place the olives with pimentos showing for the eyes and the onion for the mouth.  Place 2 pieces of chives at the top to serve as the antennae. Is it an alien or a bug face?  You decide!
