Fruit Sushi

Kids love to help in the kitchen and we love creating recipes they can take part in. Fruit sushi is a fun way to introduce kids to sushi. They will see more familiar ingredients and hopefully be willing to try something new! Now, bust out the chopsticks & bamboo mat and get ready to roll.

Fruit Sushi

What you need: 

Coconut Rice

  • 1 1/2 cups uncooked white sushi rice (do not use instant or minute rice)
  • 2 cups water
  • 1 can unsweetened full-fat coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt

Fruit Sushi

  • 1 mango, sliced thin
  • 1-2 kiwi, sliced thin
  • 1 cup strawberries, sliced thin
  • Additional fruit, if desired, sliced thin
  • 6 Mott's Fruity Rolls

 

What to do: 

Coconut Rice

  1. Bring water to a boil. Once boiling, add rice and cover. Let simmer for 15-20 minutes.
  2. In separate saucepan, slowly bring to boil coconut milk, sugar, and salt. Once boiling, remove from heat, and gently stir about ½ of the mixture into cooked rice.
  3. Let cool on a sheet pan before rolling into sushi rolls. (must be cooled completely)  

Fruit Sushi

  1. Place fruit roll on sushi mat.
  2. Add a thin layer of coconut rice to fruit roll.
  3. Add fruit in an even layer.
  4. Add another thin layer of rice and use sushi mat to wrap fruit roll around rice.
