Royal Wedding Celebration

May 17th 2018

The Royal Wedding is finally upon us! You can join in the fun by enjoying these classic British snacks -- perfect for a watch party, picnic or other celebration. These menu items are simple to make staples of British cuisine, meaning that you’ll be able to worry about enjoying your food rather than preparing it. Without further ado, let’s kick off a fairy tale day of your very own with tea, scones and a traditional ploughman’s lunch!

Tea & Biscuits

It’s best to start with this English fixture. That way, you can sip while you prepare the rest of the food.

Ingredients:

  • Earl Grey or English Breakfast Tea
  • Tea biscuits
  • Water

Instructions:

This should be pretty simple! Bring water to a boil and steep your favorite tea for 2 minutes. Set out your tea biscuits on a serving plate.

Scones

Whatever flavor you enjoy, these are the perfect pairing for tea, especially if you’d like something a little more substantial than tea biscuits. Whether you go with something savory or sweet, scones offer something light and traditional to munch on throughout your celebration. There’s nothing wrong with using store-bought scones, but if you’re looking to make them from scratch, here’s what you’ll need (we went with orange and cranberry, but you can substitute other flavors):

Scone Recipe

Ingredients:

  • 2 Teaspoon baking powder
  • 1/2 Cup dried cranberries
  • 1/4 Cup + 1 1/3 Tablespoon Egg Beaters® Original
  • 2 Tablespoon Egg Beaters® Original
  • 1/4 Cup + 2 Tablespoon cold Fleischmann's® Original-stick, cubed
  • 1/2 Cup + 2 2/3 Tablespoon fat free half-and-half
  • 2 Teaspoon grated orange peel
  • 8 *serving (1/4 sec spray) PAM® Baking Spray
  • 1/2 Teaspoon kosher salt
  • 2 Tablespoon granulated sugar
  • 2 Cup Ultragrain® All Purpose Flour

Scone How To:

Instructions:

  1. Preheat oven to 425°F. Spray baking sheet with baking spray; set aside.
  2. Combine flour, sugar, baking powder, orange peel and salt in medium bowl. Cut in Fleischmann's with pastry blender or 2 knives until mixture resembles coarse crumbs.
  3. Add half-and-half, Egg Beaters and cranberries to flour mixture; stir just until moistened. Turn dough onto lightly floured surface; pat to an 8-inch circle. Cut into 8 wedges; place on baking sheet. Lightly brush with 2 tablespoons Egg Beaters.
  4. Bake 12 to 15 minutes or until puffed and lightly browned. Serve warm.

Cook's Tips: For extra sweetness, sprinkle raw sugar on top of scones after brushing with Egg Beaters before baking.

Ploughman’s Lunch

The ploughman’s lunch offers a rustic and versatile selection of flavors. Traditionally, the midday pub-style meal is based around buttered bread, cheese and onions, as well as some sort of pickled food (generally things that, when placed out, can keep ‘til lunchtime when one would stop for a break from the day’s work). In our case, we’ve included ham, apples, tomatoes and cranberry chutney to add some color and flavor. Feel free to mix and match with whatever you prefer (or have on hand).

Ingredients:

  • Crusty bread sliced thick (make sure it’s something that can withstand toppings piled high)
  • 1-2 oz fresh butter
  • 8 oz regional cheese (cheddar, Stilton, wesleydale or another British variety would be fitting)
  • 4-5 pickled onions (any size)
  • 2-3 dill pickles or cornichons
  • 4 tablespoons chutney
  • 8 oz sliced ham
  • 2-3 tomatoes, for slicing
  • 1 apple, sliced
  • Anything else you like!

Instructions: Slice any produce, cheese and meat as you prefer to serve. Arrange everything on a serving plate and enjoy with tea, ale or cider!

While the day will be full of TV coverage, the wedding itself does not begin until 12 p.m. in the UK (6 a.m. Central). CBS, NBC and ABC News will all be covering the event starting at 5 a.m. Central, while a simulcast is also available via BBC America and HBO with a subscription. Make sure you set your alarm if you’re planning on watching in real time!
