Fresh romaine with lightly sauteed veggies, chicken,homemade dressing & crispy wonton strips. Tastes like your favorite restaurant salad, great for an easy lunch or light dinner. Cook Time:10-12 minutes

What you need:

  • 1 carrot, chopped
  • 1/2 red bell pepper, chopped
  • 1 cup shelled edamame
  • 1 lb chicken tenderloins (grilled)
  • 1 tsp sesame oil
  • 1 1/2 cups Romaine lettuce
  • 1 tbsp chopped cilantro
  • 2 tbsp chopped green onions

Dressing:

  • 2 tbsp Greek plain yogurt
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp peanut butter
  • 1 tsp grated ginger
  • 1 tsp grated garlic
  • 1 tsp sesame oil
  • 1 tsp sriracha

What to do:

  1. In a skillet, cook chopped carrot, red pepper and edamame until slightly soft.
  2. Cool mixture and set aside.
  3. Grill chicken with sesame oil until golden brown.
  4. In a blender add all the ingredients for the dressing and puree.
  5. In a bowl, add lettuce, cilantro, and green onions.
  6. Top with chicken, grilled veggie mixture, Wonton strips and cashews.
