Strawberry Poke Cake

Hello Summer & more importantly, hello Summer desserts. Let's be friends. Seasonal berries are where it's at with this simple poke cake. Transform a basic white cake mix into something our summer dessert dreams are made of with a few simple steps. Here is what you need to add to you list for this delicious poke cake. 

What you need: 

  • 1 white cake mix 
  • eggs oil/butter, and water as called for on cake mix box
  • 8 oz cool whip

For the Strawberry Sauce:

  • 2 1/2 cups chopped strawberries
  • 1/2 cup sugar
  • 1/2 tsp vanilla
  • 1/2 tsp lemon juice

What to do: 

  1. Prepare cake mix and bake according to package directions in a 9x13 pan.
  2. Blend strawberries in a blender or food processor until smooth.
  3. Add pureed strawberries, sugar, vanilla and lemon juice to a small saucepan over medium high heat.
  4. Heat until sugar is dissolved and strawberry sauce is thickened a bit, for about 5 minutes. Set aside.
  5. When cake is done cooking, allow to cool for about 5 minutes.
  6. Poke cake all over with a wooden spoon or fork.
  7. Pour strawberry sauce over the top of the cake and spread evenly to fill all the holes.
  8. Cover cake and allow to cool in fridge for about an hour.
  9. Top cake with cool whip and spread evenly.
  10. Place cake back in the fridge for another 4 hours, up to overnight.
  11. Slice and serve.
