Baja Citrus Shrimp & Vegetable Kabob

From the Spring 2014 issue of Gatherings. Shrimp and vegetables combine for yummy, colorful kabobs on your grill.

  • 1 package McCormick® Grill Mates® Baja Citrus Marinade
  • 1/4 cup olive oil
  • 2 Tbsp. vinegar
  • 2 Tbsp. water
  • 2 lbs Aqua Star 16/20ct. shrimp, peeled & deveined
  • 5 cups assorted cut-up vegetables, such as yellow
  • squash, zucchini and red or yellow bell pepper

  1. Mix Marinade Mix, oil, vinegar and water in small bowl. Place shrimp and vegetables in 2 separate large resealable plastic bags. Pour half of the marinade into each bag; turn to coat well. Refrigerate 15 minutes or longer for extra flavor.
  2. Remove shrimp and vegetables from marinade. Discard shrimp marinade; reserve vegetable marinade. Alternately thread shrimp and vegetables
  3. onto skewers.
  4. Grill over medium heat 6 to 8 minutes or until shrimp turn pink, turning frequently and basting with reserved vegetable marinade.
