Berry FroYo Bites

Easy, no bake dessert featuring Greek yogurt mixed with honey in a almond/coconut oil & coconut sugar crust. Topped with fresh raspberries & frozen.

  • ½ cup almonds
  • 3-4 tablespoons coconut sugar (depending on desired sweetness)
  • 4 tablespoons coconut oil, melted
  • 1 ½ cups of plain Greek yogurt
  • 4 tablespoons honey
  • 2 cups fresh chopped raspberries (can use strawberries)
  • 12 cup muffin tin and liners

  1. Line a 12-cup muffin tin with cupcake liners
  2. Add almonds to food processor, and process till finely chopped.
  3. In a small bowl, stir together almonds, coconut sugar, and coconut oil. Spoon a small amount into the bottom of each muffin cup.
  4. In a medium bowl, mix together yogurt and honey. Spoon 2 tablespoons into each muffin cup, covering the crust.
  5. Top with fresh chopped berries. Freeze until firm, about 6 hours.
