Super Star Nachos

Spice up your tailgate with a healthy spin on a fan favorite- Nachos!

4 entrée serving or 8 snack servings

  • 1 large bag of tortilla chips (or if using Beanitos use 2 bags)
  • 2 jars black bean and corn salsa (add the following below to the salsa)
  • 2 cans of corn
  • 2 cups of cilantro, chopped
  • Lime juice to taste
  • Cumin to taste
  • Garlic powder to taste
  •  
  • Beef and Bean Mixture
  • 1 tbsp extra-virgin olive oil
  • 1-pound ground beef (grass-fed beef preferred)
  • 2 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 tsp salt
  • 1 ½ tsp chili powder
  • 1 ½ tsp cumin
  • 2 tsp hot pepper sauce for medium spice
  • 1 can black beans, drained
  •  
  • Additional Toppings
  • Shredded jack cheese
  • Plain yogurt
  • Chopped green onions
  • Avocado
  • Black olives
  •  


  1. Mix up the salsa ingredients and set aside.
  2. Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and sauté for 2 minutes.
  3. Add ground beef to skillet.
  4. Season meat mixture with salt, chili powder, cumin and hot pepper sauce.
  5. Cook meat mixture 5 minutes, then stir in beans and reduce heat to low. Cook until meat is no longer pink.
  6. Arrange chips on a platter, top with cheese (if using), spoon beef and bean mixture over cheese and chips, add salsa mixture over the top and add any other toppings of your choice.
  7. You can enjoy these as an entrée if you split up 4 ways or as a snack if you split up 8 ways!
