Grapefruit Avocado Salad

What would you say if we told you that 2 ingredients could make your next meal? AND that those 2 ingredients are superfoods, perfect for a fresh start to the new year...Interested? 

Friends, it's a new year and we're determind to prove that making "pinteresty" food at home is possible. 

Do you ever buy grapefruit cups in their juice at the store & wonder how they get those perfect grapefruit segments? It's called supreming a grapefruit and if you have never tried it- you're not alone. Grapefruit fans- get ready for life changing tips on how to eat MORE grapefruit.

After you learn our favorite citrus trick...you're ready to try our Grapefruit Avocado Salad. Not sure how these two pair up?  You have to give it a shot. It's a fresh, healthy combo that just might pep up your taste buds and become a new favorite. TWO ingredients - What's not to love?!

Grapefruit and Avocado Salad

1 large Hass avocados (or two medium)

4-5 large grapefruit (reserving the juice from the grapefruit)

2 tbsp extra virgin olive oil

Salt and pepper

Directions

  1. Begin by supreming your grapefruits (see video), this will give you beautiful grapefruit sections without any of the membrane or white pith. As you’re supreming the grapefruit, be sure do so over a bowl to capture the juice you will be using to finish this salad.

  2. Cut avocado in half lengthwise, remove the pit, and cut avocado into 4-5 thick slices, this will create crescent shaped avocados pieces for your salad. Carefully scoop out the avocado slices from the skin with a spoon and place in the center of your serving dish. Arrange them in a way that speaks to you. 

  3. Place grapefruit segments around the avocado slices in the middle, creating a beautiful contrast with the two colors.

  4. Using the leftover grapefruit juice, whisk in two tablespoons of extra virgin olive oil, then spoon over avocado. Not only does this add a wonderful flavor to your salad, it will also prevent avocado from turning brown because of exposure to the air.

  5. Sprinkle with salt and pepper.

  6. Serve with crackers or over a bed of greens and enjoy!
