This is packed with incredible flavor using sweet Italian sausage and garlic, and that wilted baby spinach makes sure you’re getting your greens.

Sweet and savory sausage, fresh greens and nutty parmesan combine to make a flavorful skillet dish.

Ingredients:

  • 8 ounces 100% whole wheat penne rigate 
  • 1 tbsp olive oil
  • 1 (11-ounce) package sweet Italian sausage, thinly sliced
  • 2 garlic cloves, minced
  • 1 (5-ounce) container fresh baby spinach
  • 3 tbsp grated Parmesan cheese
  • 1/8 tsp freshly ground black pepper

        Directions:

        1. Cook penne as label directs; reserve ¼ cup pasta cooking water, then drain.
        2. Thinly slice 1 package sweet Italian-style sausage crosswise. Heat olive oil in a large skillet over medium-high heat; add sausage and cook 3 minutes or until lightly browned, stirring occasionally.
        3. Mince 2 garlic cloves; add to skillet and cook 30 seconds, stirring frequently.
        4. Add baby spinach to skillet; cook 2 minutes or until wilted, stirring occasionally. Add penne and reserved pasta water to skillet; cook 2 minutes or until heated through, stirring occasionally. Remove from heat.
        5. Stir 3 tablespoons grated Parmesan cheese and 1/8 teaspoon black pepper into pasta. Makes about 7 cups.
