Caramelized Onion, Mushroom, and Bell Pepper Toast

When caramelizing your onions, slow and steady is the name of the game in order to develop deep flavor.

The broiler crisps our bread, melts our cheese, and allows this dish to come together in less than 20 minutes.

Make it your own with a dash of balsamic or serve with some greens on the side.

Ingredients:

  • 1 large yellow onion, thinly sliced
  • 2 tablespoons canola oil
  • 1 tablespoon water
  • 1 medium red bell pepper
  • 1/2 (8-ounce) package white mushrooms, sliced
  • 4 sliced whole-grain 100% whole wheat bread
  • Cooking spray
  • 1/4 teaspoon black pepper
  • 4 sliced provolone cheese, cut into 1/2-inch-thick strips

          Directions:

          1. Thinly slice 1 large yellow onion. Heat 1 tablespoon canola oil in a large skillet over low heat. Add onion and 1 tablespoon water to skillet; cover and cook 10 minutes. Uncover; cook 7 minutes or until very soft and caramelized, stirring occasionally.
          2. Place oven rack 6 inches from broiler; preheat broiler to high. Thinly slice 1 medium red bell pepper. Heat 1½ teaspoons canola oil in a second large skillet over medium-high heat; add pepper and cook 3 minutes, stirring occasionally.
          3. Add ½ (8-ounce) package sliced white mushrooms to skillet with bell pepper; cook 4 minutes or until tender, stirring occasionally.
          4. Place 4 slices whole-grain 100% whole wheat bread on rimmed baking pan; spray both sides with canola oil cooking spray. Broil 2 minutes or until bread is toasted and golden brown, turning once. Top toast with onion, bell pepper, and mushrooms; sprinkle with ¼ teaspoon black pepper.
          5. Cut 4 slices provolone cheese into ½-inch-thick strips; lay over vegetables on toast and broil 2 minutes or until cheese melts.
