Spring Salad with Poppyseed Dressing

Most of the work in this recipe is simply chopping your fresh ingredients. The rest is simply tossing everything together - easy!

Ingredients:

  • 1/3 cup avocado or olive oil
  • 3 tbsp apple cider vinegar
  • 2 tsp honey
  • 1 tbsp poppy seeds
  • Pinch of ground dry mustard
  • Kosher salt and freshly ground black pepper

  • 6 cups fresh baby spinach
  • 1 pint strawberries, sliced
  • 2 avocados, diced
  • 4 ounces crumbled Gorgonzola
  • 1/4 cup sliced almonds, toasted
  • Half a small red onion, thinly sliced

        Directions:

        1. Whisk all ingredients together until combined. Add a pinch of salt and pepper, or more to taste.

        1. Toss all ingredients together with your desired amount of dressing until combined. Serve immediately.
