BLT Pasta Salad

Everyone loves a BLT. Now you can try it in pasta salad form! Whitney is showing us how to make BLT Pasta Salad using ingredients you probably already have on hand.

Not a fan of mayonnaise? No worries! Replace mayonnaise with greek yogurt or ranch dressing without losing any of the creamy texture.

You can serve this dish immediately, but for best results let it set in the refrigerator to allow the flavors to meld together.

Keep these ingredients on hand - you’ll want to make this for every pot luck, cook out and barbecue!

Ingredients:

  • 10 slices fully cooked bacon, heated, chopped
  • 1 pkg (6 oz each) refrigerated diced oven roasted chicken breast
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes-No Salt Added, drained
  • 1/4 cup + 1 1/3 tablespoon light mayonnaise
  • 8 ounces dry whole grain penne pasta, uncooked
  • 1/4 teaspoon garlic salt
  • 2 cups baby spinach leaves, coarsely chopped

          Directions:

            1. Cook pasta according to package directions. Drain and rinse under cold water until cool.
            2. Combine all ingredients together in a large bowl and stir well to combine. To prepare the dressing, mix dressing ingredients thoroughly.
            3. Serve immediately or within 2 hours for best quality.
