Back to Basics: How to Make Pancakes

Forget your box mix! Whitney shows us how to make fluffy pancakes from scratch on this week’s Back to Basics.

Heat your griddle, make your simple mix and you’ll have a tasty homemade breakfast in no time. Now to decide how to top these tasty flapjacks! Butter & syrup? Berries and whipped cream? Make it your own!

Ingredients:

  • 1 ½ cups milk
  • 2 tbsp distilled white vinegar
  • 4 tbsp (1/2 stick) butter, melted and cooled
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp vanilla extract
  • 2 large eggs, whisked
  • Nonstick cooking spray

          Directions:

          1. Preheat a griddle to 325° or heat a skillet over medium heat.
          2. Combine the milk and vinegar in a medium bowl. Set aside for 5 minutes.
          3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
          4. Whisk the vanilla and melted butter into the milk mixture. Whisk in the eggs and stir until well combined. Stir in the flour mixture with a wooden spoon until most of the lumps are gone and the batter is smooth.
          5. Coat the griddle or skillet with nonstick cooking spray. Pour ¼-cup portions of the batter onto the heated griddle. Cook until bubbles appear on the top, about 2 minutes, then flip and cook the other side for about 1 minute.
