Mini Barbecue Meatloaves

How cute! Join Fresh Dish Foodie, Whitney, as she creates these flavor-packed, bite-sized mini meatloaves. Good things definitely come in small packages.

Give this recipe a try:

Ingredients:

  • Nonstick cooking spray
  • 2/3 cup barbecue sauce
  • 1/3 cup salsa
  • 2 tsp Worcestershire sauce
  • 1 cup dry bread crumbs
  • 1 small onion, finely chopped
  • 1 small green pepper, finely chopped
  • 1 large egg, lightly beaten
  • 2 tbsp Montreal steak seasoning
  • 1 1/2 lb 90% lean ground beef

    Directions: 

    1. Preheat oven to 400° and grease a muffin tin with cooking spray.
    2. In a large bowl, mix together barbecue sauce, salsa, and Worcestershire sauce; reserve 1/2 cup mixture for topping. Add bread crumbs, onion, pepper, egg and steak seasoning to remaining sauce mixture. Add beef; mix gently but thoroughly.
    3. Place 1/3 cup beef mixture in each muffin cup. Spoon reserved sauce mixture over tops.
    4. Bake 20-25 minutes or until an instant-read thermometer inserted in the middle of a meat loaf reads 160°. Let stand 5 minutes before removing from pan.
