Cranberry-Apricot Baked Brie

Creamy cheese and sweet fruit all wrapped up in light, flaky crust. A favorite appetizer from our Holiday 2014 issue of Gatherings magazine.
- Preheat oven to 400° F. Combine cranberries, apricots, almonds, honey, thyme, 1/8 tsp. salt, and pepper in a medium bowl. Set aside.
- On a sheet of wax paper or parchment, roll puff pastry to 12-inch square and cut two 6-inch rounds from it. Trim top rind off Brie and center cheese on one pastry. Top with fruit mixture and cover with additional pastry. Crimp the edges together to seal in the cheese.
- Beat egg white and 1/8 tsp. salt in a small bowl and brush some egg wash along pastry edges. Chill in freezer for 15 minutes.
- Brush pastry lightly with egg wash and place on parchment-lined baking pan. Bake for 20-30 minutes.
- Let cool for 15 minutes then serve with fresh baked crusty bread and crackers.
