Zucchini Tart
A savory tart with the flavors of summer squash & sun-dried tomato pesto. Optionally top with chicken or shrimp for a more hearty meal.
A savory tart with the flavors of summer squash & sun-dried tomato pesto. Optionally top with chicken or shrimp for a more hearty meal.
- Roll out 1 thawed puff pastry sheet to a 9”x 11” rectangle on a lightly floured surface. Poke all over with a fork; bake on a baking sheet at 400°F, 15 minutes.
- Spread with ¼ cup jarred sun-dried tomato pesto mixed with 2 tablespoons olive oil. Top with 1 cup shredded mozzarella, 1 each small sliced zucchini and yellow squash, and some rosemary leaves and sliced scallions.
- Season with salt and pepper. Bake until bubbly, 15 minutes.
- Tip: For a more hearty option, cooked chicken or seafood also make great toppings on this savory tart.
