- Mix the milk and vinegar and let sit for a minute or two.
- Whisk flour, sugar, baking powder, baking soda, and salt together.
- Mix the egg, milk mixture, and melted butter into the dry ingredients.
- Heat a griddle or skillet over medium heat. Melt about a tablespoon of butter in the pan (essential for creating a golden brown crust).
- Pour about 1/3 cup batter into the hot skillet and spread it flat (it will be thick). Arrange a few blueberries on top. Cook until you see small bubbles on top and the edges starting to firm up. Flip and cook for another 1-2 minutes until the pancake is cooked through.
- Serve with butter and maple syrup.
