- Combine water and sugar in a saucepan. Bring to a boil over high heat and cook until the sugar dissolves and the liquid just starts to thicken. Transfer the liquid to a heatproof container, add the thyme sprigs, and chill for at least 4 hours.
- Start by muddling the plums with the thyme simple syrup and lemon juice until all of the plum juices have been released.
- Shake with ice in a cocktail shaker.
- Fill two glasses half full with crushed ice.Strain the simple syrup mixture into the glasses.
- Top off with Prosecco and garnish with extra plum slices and thyme sprigs.
