Sliced sweet potatoes, roasted and topped with savory toppings. Perfect for a healthier Thanksgiving side dish or appetizer. Recipe featured in our 2019 Holiday Gatherings issue.
- Preheat your oven to 500°.
- In a small bowl combine the olive oil, sea salt, and paprika.
- Coat sweet potato rounds in the olive oil mixture. Place them in a single layer on a large baking sheet.
- Bake for 8-10 minutes on each side until golden.
- Transfer to a serving tray and top with the goat cheese, candied walnuts, and cranberries. Spoon some honey on top and sprinkle with the lemon zest.
- Just before serving, finish with a light drizzle of balsamic glaze and garnish with fresh basil.
