Simple barbecued chicken wings. Great for Memorial Day barbecues.

  1. Oil grill racks and then prepare your grill for direct grilling over medium heat, about 350°. Keep one burner off or on low in case some wings are cooked before others.
  2. Place wings in a single layer on the grill directly over the heat. Close the lid and cook for a few minutes, then use tongs to check for dark spots on the bottom. If wings are beginning to char, flip them. Continue to monitor, flipping wings as they darken. If some wings darken before others, shift them to a cooler part of the grill where they’ll continue to cook but not brown excessively.
  3. After about 18 minutes of monitoring and flipping, use an instant read thermometer to ensure they’ve reached 165°. When each wing is cooked through, remove it (note they may reach the temperature at different times based on hot spots on the grill).
  4. Use tongs to transfer fully-cooked wings to a bowl, add barbecue sauce, and toss to coat the wings.
