How to Roast Hatch Chiles

Use your oven to roast fresh green Hatch chiles at home.
- Preheat broiler to 425°. Line a sheet pan with foil.
- Lightly coat Hatch chile peppers with olive oil and a sprinkle of salt. Place them on the foil-lined sheet pan in a single layer.
- Place the sheet pan in the upper third of your oven and roast for about 10 minutes, until the chile peppers start to blister and blacken.
- Using tongs, turn the chile peppers over to roast on the other side for another 10 - 15 minutes. When the chile pepper skins have blistered and blackened on both sides, remove from the oven.
- Place the roasted Hatch chile peppers in a bowl while still hot, and cover with foil to allow the chile to steam.
- If you're using the chile peppers right away, peel them as soon as they’re cool enough to handle.
- If you’re storing the chile peppers, place the cooled chile peppers in vacuum bags and vacuum seal them. Store in the freezer until needed. Thaw in the fridge overnight.
