- In large skillet, cook oats and pecans over medium heat 10 minutes or until lightly browned and fragrant, stirring frequently; remove skillet from heat.
- In small microwave-safe bowl, heat butter in microwave oven on high 30 seconds or until melted; whisk in honey, orange zest, vanilla extract, cinnamon, salt, and ginger. Pour butter mixture over oat mixture; stir to coat. Stir in apricots, flaxseeds, and cranberries; cool. Store at room temperature in an airtight container up to 1 week. Makes about 2 cups.
- CHEF TIP: To reduce the amount of sugar in the granola, use reduced-sugar or unsweetened dried cranberries.
